Peanut butter and jelly rolls! Yum yum yum in my tummy. Switched up tonights last meal and decided to experiment a little. I whisked together 4 egg whites, 2 Tbsp coconut flour, 1 Tbsp flaxmeal, 2 Tbsp low fat cottage cheese, 1/2 tsp baking soda, cinnamon and vanilla extract to taste. Cook in a large pan like if you were making a massive jumbo pancake. Once cooked, spread a thin layer of natural jelly jam of your choice (i used grape!), a spoon of almond butter, and roll up like tortilla. Cut into however many smaller rolls you want, and devour instantly!! So good! I had a cup of unsweetened almond with this as well ;) ..
